Bevezető a halászlé sokszínűségéhez
Hungary is a landlocked country, which is one reason there isn’t a huge tradition for seafood consumption here. That said, Hungarians do like freshwater fish, particularly in the summer and around the Christmas holidays. This includes variations of carp, catfish, and fogas (pike/perch).
Many variations include fish roe, giving the broth a mealy texture. While carp are the most prevalent fish used in Hungarian fisherman’s soup, some recipes also mix in helpings of pike/perch and catfish. Exact proportions and ingredients are well-guarded secrets, and you will rarely find two that are the same.

Szegedi halászlé-that is named for the town on the river Tisza-differs noticeably from halászlé from the small city of Baja (located on the banks of the Danube). The former includes multiple types of fish and is run through a sieve. If you are going for Baja halászlé, you can expect it to include gyufatésztá (egg noodle pasta), keeping in line with their fish soup traditions. Many variations include fish roe, giving the broth a mealy texture.
First of all, the gutted fish is filleted. Next in a saucepan of water add the bones, head and finely choppe onions seasoning with salt and pepper, also adding garlic with a sprinkling of ground paprika Approximately a litre of water per person. Next cut the remaining filets into small square pieces, Season with salt and place in the fridge until needed. When the stock ( broth) is ready pour the contents of the pot through a colander using a wooden spoon to remove the tender pieces of meat from the bones. This will now go back into the stock (broth) which will both flavour and thicken it.

Speciális változatok
In this area, the balance of hot and sweet paprika is variable, and a truly authentic halászlé should be made to order. The use of industrial stock is common in some restaurants, but homemade stock is preferable for a richer flavor. Remember, the flames must be very strong until the end, after this time the liquid will have reduced of at least 3-4 fingers and got thicker, with the paprika perfectly merged into the water and not unpleasantly just floating on it.
The main difference between the Szeged and Baja versions lies in the preparation and the emphasis on the fish. For the Szeged version there is a base stock in which parts of the fish (heads, central bones and collars, but sometimes also fish of lower value like crucian carps, breams, rudds) are being boiled and then passed through a strainer. The Danube/Baja style focuses more on the soup itself, with layers of onion and fish gradually built up during cooking.

First of all, score the cleaned carp and pike on both sides, make cuts every few millimeters to break the smaller fishbones, then cut them into slices of about 2 fingers thick. Cut also the wels catfish fillet into slices. Add all the water and the cascabel chili (if you use it), and all the carp, and place the cauldron on the open fire. When the water has reached the boil (it will take probably about 15 minutes), add the remaining fish, the paprika cream if you use it, and add all the paprika powder. From this moment count about 35 minutes. Remember, the flames must be very strong until the end, after this time the liquid will have reduced of at least 3-4 fingers and got thicker, with the paprika perfectly merged into the water and not unpleasantly just floating on it.
Fisherman Soup (Halászlé) is a Hungarian traditional dish. It is a tasty and spicy soup made of river fish and seasoned with paprika. Since this is a traditional dish, there are countless different recipes. However, the main ingredients are always fish, paprika and onions. The trademark of this dish is carp, but other types of fish are also used, such as catfish, pike, perch. Another important ingredient is quality paprika, hot and normal. Therefore, it is common that fisherman soup is a bit spicy, and sometimes it can be very spicy.

Élelmezési hagyományok és tálalás
At a quality restaurant you can expect your halászlé to be brought out in a mini-bogrács with a candle lit underneath to keep the cauldron warm as you ladle it into your bowl. Unlike in many other parts of the world, there is no stigma around eating carp in Central and Eastern Europe, especially around Christmas, when it is consumed for luck. If carp’s not your thing, you can still enjoy harsa halászlé, which is the same soup, only made with catfish. Catfish will be lighter, flakier, and is a variation of the dish that is gaining ground with Hungarian fish soup lovers for its less pungent flavor.
